CafĂ© Organico Marcala, S.A. (COMSA) in Honduras prioritizes human well-being and harmony with nature. Their philosophy, known as Finca Humana (the Human Farm), emphasizes educating their 1,500+ producer-members to coexist with nature successfully. Central to this philosophy is La Fortaleza, COMSA’s biodynamic demonstration farm, where they host week-long seminars called Pata de Chucho to transfer knowledge. COMSA focuses on organic cultivation methods to produce high-quality coffee, but their teachings extend beyond agriculture. They allocate proceeds from coffee sales to fund an innovative international school aimed at nurturing future leaders aligned with Finca Humana principles. The excellence of COMSA coffee stems from several factors, including traceability to the Marcala region, meticulous hand sorting, cherry floating, proper fermentation, extended drying times, and adherence to the COMSA philosophy and training.
